Traditional small tagliatelle with chicken

Ingredients (makes 5-6 servings):

  • 500 gr traditional small tagliatelle  the "the authentic"
  • 1 chicken (about 1 1/2 to 2 Kg), in portions
  • 1-2 onions, chopped
  • 1 tin tomato concasse or a tablespoon of tomato paste
  • 3/4 cup. olive oil
  • Salt, pepper, paprika
  • Grated Greek cheese "Kefalotyri" (optional) or Parmesan

Cooking directions:

Wash the chicken and let it dry.

Heat the oil in a pan and saute  the chicken

Sweet ‘’trachanas’’ (frumenty) soup with tomato and feta cheese (from E. Mamalakis)



Ingredients (makes 5-6 servings)

  • 1 glass sweet trachanas ''the authentic".
  • 1 liter vegetable stock.
  • 1 tablespoon tomato paste.
  • 1 glass fresh chopped tomato.
  • 150 gr feta cheese cut into cubes.
  • 6 slices bread, preferably stale, cut into cubes.
  • 6 tablespoons olive oil.
  • Salt and pepper to taste.

Cooking directions:

Put the vegetable broth in a large pot and while it is still cold pour into the frumenty.

Stir well and let the mixture come to boil.

Tagliatelle in pieces with ground meat sauce

Ingredients (makes 4 servings):

  • 500g Chylopitaki (Tagliatelle in pieces) "the authentic".
  • 500g minced beef or pork mixed with
  • Tomatoes (fresh optional)
  • Fresh mushrooms (optional)
  • Green pepper, cut into thin slices
  • 1 medium onion
  • Half a clove of garlic
  • 1 pinch of oregano
  • 1/2 cup red wine
  • parsley
  • freshly ground pepper
  • salt
  • olive oil
  • Graviera,Kefalotyri cheese or parmesan.

Cooking directions:

Saute the onion until golden brown with garlic in nonstick pan.

Sour "trachanas"(frumenty) with traditional Greek sausage and feta cheese

Ingredients (makes 2-3 servings)

  • 1/2 cup of water trachana "the authentic".
  • 1 cup olive oil
  • 2 cups fresh milk
  • 500gr feta cheese
  • 250 gr traditional Greek sausage*
  • salt and pepper

Cooking directions: 

Pour water into the pan and immediately, while the water is cold, add the trahana. Mix well keeping on medium heat. Add salt, pepper and the sausage cut in small pieces .Bring to a boil and let it cook for at least 15 minutes, stirring constantly. At the end of cooking add the grated cheese and stir slightly. Serve immediately on warm plates.
